Does anyone know if theres a dating system for Mossberg shotgun serial numbers? I've been looking and I've found nothing.

Preferably the 500 or Revolution.

I highly doubt it, given the sheer number of Mossberg shotguns that are produced. If you really wanted to know, you could contact Mossberg and find out if they offer a service that will date your particular shotgun. I know companies such as Colt and Smith & Wesson do this.

Believe it or not, there is a National Mossberg Collector's Association. (go figure)

I would suspect they would be able to answer your questions. They are also a source for Mossberg parts and accessories.
